The Drink: Manhattan

The Buzz: Well, it’s happened. I have officially tasted the best Manhattan of my life. What makes this specific Manhattan so special? Top-shelf bourbon? No. Perfectly balanced ingredients? Perhaps. Pork? Of course! That’s right, Logan Circle’s Viridian has discovered the missing ingredient in the classic cocktail—a bit of pig. They infuse Vya sweet vermouth with pork and mix it with the requisite bourbon, in this case Maker’s Mark, and Peychaud bitters. The resulting drink is a rich, dark brown and surprisingly thick—-it feels downright luxurious on the tongue. While I’m not sure that I could detect essence of pork, it was rich in flavors and as complex as an entree. I was so disappointed when I got to the bottom of my glass, that I even ate the maraschino cherry. (I had sworn off them after an incident some years ago involving an open bar and cosmos.) I can’t say I enjoyed the cherry, but I will definitely return soon for the liquid.
