David Varley, the executive chef at Bourbon Steak in Georgetown, apparently knows a lot about pork, too. WaPo‘s Jane Black reports that Varley took top honors during the Cochon 555 grand challenge at the Aspen Food & Wine Classic on Sunday.
“I wasn’t surprised. We worked hard,” Varley told Black during a phone interview. “On any given day, I’ll throw our food up against anyone else’s.”
For his efforts, Varley walked away with a Grillworks 42 Asador, a nearly $6,000 grill built from airplane-grade stainless steel, which makes even the most jaded chef drool. “Many of the chefs took none-too-sober turns on the grill at the afterparty,” says Ben Eisendrath, the Adams Morgan resident and president of Grillworks, which supplied the grand prize to Cochon 555.
