Layrle’s New Post: A few years ago, I was at a private dinner event where Francis Layrle, the chef at the French ambassador’s residence, was cooking. It was a wonderful meal, despite the fact that a massive pig’s foot was unexpectedly heaved onto my plate by the dinner’s hostess. Layrle is now at Bezu in Potomac. Tom Sietsema says: “From the first bite, you can sense why the chef was able to stay so long at the embassy. The guy can cook.” Indeed he can!
