In case you missed October’s temporary takeover of Toki Underground by Eddie Huang of New York’s BaoHaus, here’s a behind-the-scenes look at the pop-up concept that just posted on YouTube. “It’s not a blind date,” Toki chef Erik Bruner-Yang says of his collaboration with Huang on the two-night bao chow down. The arrival of the Taiwanese answer to the hamburger—-or “Chinese taco,” as Bruner-Yang describes it in the video—- served open-faced on steamed buns, appears to have been a big draw. Just look at the line!
