Thunder Burger chef Ryan Fichter just keeps coming up with funky new ways to plate wild game. Over the past year, I’ve sampled beer-braised alligator ribs, kangaroo sliders and even python tom kai at Fichter’s beer-centric rock ‘n’ roll-themed burger joint in Georgetown. The weekly “Wild Wednesday” special tonight is another gamey twist on a Thai staple, albeit less slithery than the spicy snake soup: an “elk satay with a spicy peanut dipping sauce.” In case you’re wondering, the meat of the horned forest animal is reportedly lower in fat and cholesterol than beef.
