Chefs seem to be changing with the season, because there have been a lot of kitchen switch-ups announced in the past several days. Here’s who’s coming and who’s going:
Washington Post critic Tom Sietsema brings word that Wit & Wisdom has brought in Trummer’s on Main chef Clayton Miller to man its kitchen. Miller was named one of Food & Wine’s Best New Chefs in 2010. The Four Seasons restaurant’s opening chef, Ben Lambert, apparently wasn’t “the right fit,” celebrity chef/restaurateur Michael Mina tells Sietsema.
The Hamilton named Clyde’s of Georgetown chef Salvatore Ferro its new top toque. Ferro was previously 1789 executive sous chef after moving to D.C. from Vegas in 2009. Ferro replaces Brian Stickle, who’s been promoted to Clyde’s Restaurant Group‘s corporate chef.
1789 executive pastry chef Mallory Staley left in February, making way for Justine Sullivan, Eater reported yesterday. Sullivan, a D.C. native who’s worked as assistant pastry chef at 1789 over the past year, beat out competition from New York and Las Vegas for the job.
Ris also has a new pastry chef: Sue Drabkin, who was most recently pastry chef at the Inn at Perry Cabin in St. Michaels, Md. (where scenes from Wedding Crashers were filmed). New on her menu: a Basque cake with strawberry rhubarb compote, brown sugar ice cream, and toasted walnuts.
