Columbia Heights’ new Mexican joint, El Chucho, opens tonight with margaritas on tap and fried tripe tacos with foie gras sauce. It’s the latest venture from Jackie Greenbaum, owner of Jackie’s, Sidebar, and Quarry House Tavern in Silver Spring.

Half the menu will consist of bocadillos or appetizers, and the other half of tacos and tortas. Jackie’s chef Diana Davila-Boldin will prepare some standard taco varieties like al pastor and carne asada, as well as Corona beer can chicken tacos and fried squash tacos.

Greenbaum tells Y&H she’s a margarita fanatic: “I actually have a super guilty pleasure that I will drink a frozen margarita of the worst sort any place they have it.” But at El Chucho, she promises margaritas of the best sort, with half a dozen varieties ranging from sweet to tart to dry and herb-y. El Chucho will also have a dozen house-made sodas that you can add to your base margarita.

The design is inspired by the old-fashioned cantinas of Mexico City, but with yellow formica tables and blue walls. There’s also a rooftop, which will be perfect for enjoying Greenbaum’s favorite drink: a whipped avocado margarita.
