José Andrés has been known for cooking some pretty crazy stuff: liquid olives, foie gras cotton candy. Next on his plate? Human liver with some fava beans and a nice Chianti.

Tom Sietsema reports the celebrity chef has been tapped as a culinary consultant for a new NBC series called Hannibal, based on Silence of the Lambs‘ serial killer Hannibal Lecter. Producer and screenwriter Bryan Fuller reached out to Andrés in order to better demonstrate the character’s nature as a “culinary sophisticate.”

Already, there’s a scene in the works that involves human loin with roasted apple and Cumberland sauce. Andrés tells Sietsema “every single body part” will make it into the show. Apparently, he’s been doing research by eating a lot of lung dishes this summer.

Animal lungs, that is.
