What It Is: It’s like a crab cake, but made of rabbit meat. The entrée is served with wax beans, fennel, and—appropriately—carrots.
What It Tastes Like: Light in texture and juicy, like dark meat chicken, and not gamey at all.
Story Behind the Dish: “It’s a crab cake recipe without the crab,” says chef and owner Scot Harlan. “It’s a French dish by way of Virginia. Marylanders would probably say the same thing, but I’m a Virginian. And we’re in Virginia.”
How to Eat It: Take copious forkfuls and let it populate your mouth.
