Back in May, Y&H brought you news that former BLT Steak chef Victor Albisu was opening his first solo venture, a taqueria called Taco Bamba in Falls Church.
The restaurant isn’t set to open until later this fall, but you’ll have a chance to try Albisu’s food even sooner during a pop-up at Black Jack on Oct. 22. The $40 event will include as much passed and stationed food and specialty cocktails as you can handle.
On Monday nights beginning on Oct. 29, Black Jack will host “Taco Bamba Nights” with an la carte menu of tacos, snacks, and other test creations from Albisu. The menu will become available Sundays, beginning Oct. 28. Some dishes to expect:
Taco Bamba – Skirt Steak, Chorizo, Chicharones
Chipotle Portabella Taco – Grilled Corn, Cotija
Pork Panza Taco – Grilled Bacon, Pork Belly, Pineapple, Pickled Jalapeño
Duck Tinga Taco – Duck Leg, Crispy Skin, Charred Endive, Chipotle Crema
Surf and Turf Taco – Grilled Octopus, Sweetbreads, Charred Tomatillo Salsa
Crispy Kiss Taco – Pork Tongue, Beef Tongue, Scallions, Red Chili Aioli
Grilled Scallop and Grilled Guacamole Nachos
Black Oyster and Shrimp Campache
Spicy Grilled Bamba Wings
Wood Grilled Corn al Chili Limon
Pineapple Agua Fresca
