What It Is: This meme-worthy dish is typically created by stuffing a deboned chicken into a deboned duck into a deboned turkey. Smith Commons’ version looks less like one animal swallowing another and more like they all got caught in the same hunter’s trap. The dish is composed of pan-seared chicken, duck confit, roasted new potatoes, and yellow wax beans wrapped in turkey bacon.
What It Tastes Like: Dinner at Teddy Roosevelt’s house, shotgun not included. Full of fall flavors like rosemary, thyme, and shallots, this dish is savory, succulent, and juicy. It might even make you drool like an old bloodhound.
History of the Dish: “I used to make a classic roulade of turkey, duck, and chicken all wrapped around, but I wanted to try something different with the same concept,” says chef Kamal Chanaka. “I say it is deconstructed Turducken. Same concept, but the texture and technique is totally different.”
