As chef Garret Fleming, formerly of The Pig, prepares to open his own restaurant Gristle, he’s been hosting pop-ups at 3 Little Pigs charcuterie shop in Petworth. But if you missed his September series, there’s another chance to try Fleming’s cooking Oct. 27-29.

The Marrow Brew n’ Que dinners, also at 3 Little Pigs, will feature roasted meats like smoked briskets, andouille sausage, and roast shoat (a young pig) plus other Southern comfort foods including macaroni and cheese en croute and collard greens. UPDATE: The Gristle team is still looking for the right location for the restaurant. Managing partner Brian Pereira says they were in negotiations for a couple of spots near Logan Circle, but they’ve since decided to stray away from the saturation of restaurants around 14th Street NW and are now looking in Petworth and Bloomingdale as well as other places within a three-mile radius of downtown.
