Coffee may be the focus of forthcoming Logan Circle shop Slipstream, but owners Ryan Fleming and Miranda Mirabella plan to take the cocktails pretty seriously, too.
“It’s going to be a cocktail menu that’s not a cocktail menu,” says Steve Oshana, who’s behind the drinks. Oshana previously worked at BLT Steak and Equinox and is also now creating cocktails for Water & Wall.
What is a not-cocktail menu? One section will be broken down by spirits, highlighting various small-batch distilleries. And then another section will list various flavor profiles: sweet, sour, bitter, sparkling, spiritous (heavy on the booze), coffee, and so on. Choose a spirit and an adjective, and the bartender will make something that fits the request.
“The idea is to have a conversation, the same way that the coffee concept is going to be a conversation between the barista and the guest to find a coffee that works for them,” Oshana says. He adds that if the guest chooses a truly awful combination, the bartenders will steer them in the right direction.
If you’d rather not leave your drinking to your bartender’s imagination, Slipstream will also offer a preset list of seasonal libations that cover categories like “spiritous” or “sweet” as well as coffee cocktails. Among the caffeinated beverages: the Truffle Shuffle with ice coffee, house chocolate truffle liqueur, and burnt mint foam. There will also be the Sort of Old Fashioned for the April opening with Sazerac rye, fresh strawberry, rhubarb bitters, and orange zest.
The exact prices haven’t been worked out yet, but Oshana says it will be a fixed price across the board, so people make their choice based on what they want to try, not the number after the dollar sign.
