If you’ve been missing Tiffany MacIsaac‘s sweets since the pastry chef left her high-profile gig at Neighborhood Restaurant Group, you’ll have the chance to try them tomorrow and next Friday at Cork Market. MacIsaac’s new venture, Buttercream Bakeshop, will sell macarons, cookies, cake, and more from 11 a.m. to 7 p.m.

Among the things available will be slices of MacIsaac-approved red velvet cake ($4.50) that uses roasted pureed beets to enhance the color. “I know people around here love red velvet, but honestly I’ve always hated it because it’s this weird indecisive cake that’s not vanilla and it’s not chocolate, and it’s a horrifying color,” she says. “So it’s the first thing I started working on at home.”

MacIsaac is also baking up rice krispies, marshmallows, whoopie pies, oatmeal cream pies, and peanut butter ho hos. Macarons will come in flavors like passionfruit peppercorn, toasted coconut, and salted caramel. 

Pre-orders for cakes for this week are over. But next week’s espresso-fudge cakes and “Fat Elvis” cakes with banana chiffon, peanut butter buttercream, and smoked bacon and toffee will be available for presale on Buttercream Bakeshop’s website through Nov. 12. The six-inch cakes go for $50.

MacIsaac hopes to do at least a couple more pop-ups beyond Cork Market. She’s talking to Ice Cream Jubilee about offering Thanksgiving pies at the new Navy Yard shop, although nothing has been finalized yet. MacIsaac’s ultimate goal, though, is to open a permanent bakeshop of her own. She says she’s signed a letter of intent on a property in D.C. but declined to say exactly where until it’s finalized.

“I just want a place where I can do whatever I want all the time. So if I want to make a bunch of pies, I can make a bunch of pies. And if I want to build a showcase with 30 different kinds of rice krispies, I can do that,” MacIsaac says. “I just want a sugar playground.”
