I was once assistant pastry chef for a catering company in Georgetown with an un-air-conditioned kitchen. Summers were a little rough for us cooks. Imagine the rush of heat we’d confront when baking cookies for someone’s ice cream, searing strawberry-shortcake biscuits on a red-hot grill, or standing over an open flame making curd for a light and fluffy mousse. Forced to wear long pants and full chef’s jackets because of the ever-present risks of hot oil, searing caramel, and oven burns, we had some pretty nasty summer days in our dear swamp city.
