Adam Bernbach is shaking things up with his “Tuesday Cocktail Sessions,” in which the Bar Pilar mixologist creates five original cocktails each week. Bernbach breaks down his weekly handiwork on handwritten menus, which come with a small disclaimer: “All cocktails are only available on Tuesdays & are $11 due to prep & ingredients.” His drinks take time to make; one cocktail that calls for egg whites comes out in a hurricane glass with a good two fingers of foam sitting atop the liquid. One of Bernbach’s favorite inventions, the Mcglocklin (some drinks are named, others are given only a number), illustrates the complexity of his cocktails. Check out the recipe: Eagle Rare Single Barrel 10-year-old bourbon, Amaro Mio, Amaro Montenegro, Bergamot syrup, and barrel-aged old-fashioned bitters. The ingredients are stirred, strained into a cocktail glass, and garnished with an orange zest. The results are interesting enough that you’ll probably want to spend more time with your cocktail than with your companion.
