There’s a newsushi burrito dubbed the Nikkia that combines charred salmon, salmon roe, kimchi slaw, blistered shishito peppers, red onion, shiso, tempura crunch, and a creamy sesame sauce. It’s just one of four new options on Buredo‘s revamped menu that’s rolling out at the fast-casual restaurant’s Dupont Circle location tomorrow (1213 Connecticut Ave. NW).
In naming the freshmen buredos, they’re keeping with the Kill Bill theme, such as The McGraw that comes with short rib, kimchi slaw, jicama, carrot, arugula, garlic crunch, and wasabi tarragon horseradish sauce. It’s the first time they’ve served beef. The full menu is at the bottom of this article.
“Now that we have a little history and a lot of feedback from customers, we went back and saw what works, and what doesn’t work,” says co-founder Travis Elton. He adds that they zeroed in on upping the quality of their vegetarian offerings in particular.

Additionally, Buredo customers will now be able to get any roll as a salad for the same price. “We’ve been wanting to do it for a while,” Elton says. “This is driven the most by customer feedback. We had a salad before, but we wanted it be as good as any buredo on the menu.”
To arrive at the menu, the team tested recipes for months. Once Chef Khan Gayabazar brought in a vast array of ingredients so the staff could try out fresh combinations.
Following the Dupont Circle unveiling tomorrow, the 825 14th St. NW location of Buredo will start serving the new menu at some point next week, according to co-founder Mike Haddad.
Other changes are afoot for the rapidly expanding local chainlet. The Bethesda location in Wildwood Center (10241 Old Georgetown Road) is opening soon.
Next up are H Street (625 H St. NE) and NoMa (111 K St. NE). “Both of those locations are over 80 percent complete,” Elton says.
Finally, a Tenleytown Buredo will go in at 4235 Wisconsin Ave. NW.
On whether they plan to continue expanding locally, regionally, or nationally, Elton says: “It’s just Mike and me still. There’s not CAVA money behind us yet.”
